Poffertjes for desert anyone?

My family has always been a fan of the poffertjes that you can often find at markets and the like. My Father was born in Holland so he is no stranger to these tiny Dutch pancake like treats. There are a few variations in the recipes and perhaps even more variations on the kinds of toppings.

For Christmas, my sister gave me a poffertje tray. It is a cast iron, dinner plate size cooking pan. It sits nicely over my gas jet but according to the instructions it can be used on any stove top. Tonight was the first opportunity I’d had at giving it a go. I fully expected that I might have to fiddle with the recipe or wait a couple gos to get the cast iron cooked in. Armed with 2 recipes, I followed neither but adapted one, I mixed the batter and let it sit.

With each batch my poffertjes improved and by the last batch they were quite good. The fun of eating poffertjes, at least for the kids, is that you get to use a toothpick and stab each one, drag it through the topping and into the mouth it goes. On ours we had honey and cream. Other favourites are maple syrup or icing sugar. Yum!
